This Sunday is the big game – Giants versus the Patriots – and that means lots of kids, lots of TV sports watching and lots of food! Entertain your little ones with these semi-healthy sweet treats at superbowl for dessert! They are also great to nibble on during the game, I mean, aren’t we all big kids?

p.s. – these are great for a next day kid-friendly lunch-box treat!

Prep Time: 10 minutes
Timing: 45 minutes
(includes cooling time)
Yield: Makes 16

Chewy Oatmeal Blondie Brownies

INGREDIENTS:

  • 1/2 cup (1 stick) unsalted butter, room temperature, plus more for pan
  • 1/2 cup packed light-brown sugar
  • 1 large egg
  • 1 cup old-fashioned rolled oats
    (not quick-cooking)
  • 1 ½ cups of baking mix (see below)

Baking Mix Recipe: (whisk together and store in a sealed container for next time!)

  • 6      cups of all-purpose flour
  • 3      cups of sugar
  • 2      tablespoons baking powder
  • 1      tablespoon of salt

DIRECTIONS: 

  1. Preheat oven to 350 degrees. Brush an 8-inch square baking pan with butter. Line bottom and two sides with a strip of parchment paper, leaving a 2-inch overhang on both sides. Butter paper, and set pan aside.
  2. Using an electric mixer, beat butter and sugar until light and fluffy. Add egg, and beat until combined. With mixer on low, gradually add Baking Mix; mix just until combined. Mix in 3/4 cup oats. Pour batter into prepared pan.
  3. Using an offset metal spatula or table knife, smooth batter evenly. Sprinkle with remaining oats, pressing gently to adhere. Bake until a toothpick inserted in center comes out with only a few moist crumbs attached, 30 to 35 minutes. Let cool in pan 30 minutes.
  4. Using overhang, transfer blondie (still on paper) to a wire rack to cool completely. Place on a cutting board (peel off paper); using a serrated knife, cut into 16 squares.

These entertaining “sushi” rolls reinvent the classic PB&J sandwich for kids and make it fun for the whole family to watch football with daddy on Sundays! I sometimes like to recommend almond butter instead of peanut butter because it has a thicker consistency, good flavor and can be A LOT less messy than regular peanut butter. You can use any kind of jam, but try to use whatever you kids’ favorite flavor is or even experiment with new flavors and let your child pick it out a the grocery store. I always try to use jam that is 100% all-natural fruit and organic.

INGREDIENTS:

–        whole grain bread
–        peanut butter or almond butter
–        jam (any flavor)


DIRECTIONS:

  1. Take 2 slices whole-grain bread and remove crusts.
  2. Spoon out enough almond butter or peanut butter to spread a thin layer on bread.
  3. Spoon out enough 100 percent all-natural fruit jam to spread a thin layer on bread.
  4. Flatten bread with rolling-pin.
  5. Spread a thin layer of almond butter or peanut butter on one slice of bread.
  6. Top the almond butter or peanut butter with a thin layer of jam.
  7. Roll up bread tightly.
  8. Slice into four pieces with a serrated knife. Repeat with second slice of bread.

It was Super Bowl Sunday, and we were supposed to go to a Super Bowl party, but the weather was gorgeous, sunny and warm (especially for February)…who’d want to stay indoors? Since my husband isn’t a big baseball fan (yeah, I know, it’s football…that was a joke!), we decided to hit the beach. I love the quaint little town of Capitola in Santa Cruz, because not only am I a few feet from the ocean, but I can also shop! Capitola Village has the cutest children’s apparel store called Little Loves Closet (previously known as European Children’s Clothing). They have been in business for 10 years, and still going strong! I usually stop by there to pick something up for Miranda. I just love that store!

Little Loves Closet is located at 110 Stockton Avenue in the Merchantile Shopping Center. This charming sidewalk store carries the most fashionable children’s apparel at reasonable prices. And they always have a sale going on! They have a wide array of baby and children’s clothes (up to size 12) and a nice selection of le•top brand clothes for boys and girls (sizes 0 – 6x). Since they’re near the beach, they carry le•top bathing suits all year round! They also sell shoes and boots, rain coats, costumes, pajamas, and other accessories.
